Cooking with a Chef

I got a chance to work with Chef Adam at his home near Austin, TX. this past weekend. In the picture Chef Adam is showing us how to cut a fresh tomato for his grilled turkey burger. While I was talking to Adam, he told me that he loves the movie Star Wars, Guitar Hero and as you can see he also loves to cook too. He believes if you start early in life, and learn the basic of cooking you can too become a great cook too.

Rob's Crab Cake Recipe

Here is the recipe for my crab cake, I went to Whole Foods to buy the lump crab meat, and you have to know crab meat is not cheap...about $17 a pound, but worth it.

1 lb of lump crab meat
2 egg yolks
S&P
1 tsp. of fresh thyme
1 tsp. of fresh chives
1/4 C. diced roasted red bell pepper
bread crumbs to combined crab cakes
place in refrigerator for about an hr, to set. Let your saute pan get nice and hot, add a little olive oil and sear each side for about 5 mins each or until golden brown.

In the pic it does not show a Roasted Red Bell Pepper Aloi that I had made to go with the crab cake. So here is the recipe for Roasted Red Bell Pepper Aloi. The easy way to make it, is to puree your roasted pepper (no seeds), add mayo, S&P, and lemon juice, and if you want it a little spicy, add a little Tabasco Sauce.
Also in the pic is spinach salad that I made to go with the crab cake, but you don't have to use it, serve the crab cakes anyway you like.
